Smashed Potatoes

Fun, Crispy, Easy Side Dish


Tired of eating potatoes? But they’re so good for you! Switch up the texture a bit with smashed potatoes and, if you have littles, let them join in the smashing for a fun activity. These are so easy and yummy, we find ourselves picking them out of the pan and snacking even after dinner is finished.


INGREDIENTS

INSTRUCTIONS

  1. Put 1 3/4 pounds baby potatoes in a pot and cover with water. Bring to a boil.

  2. Reduce to a simmer and cook until the potatoes are tender, 20 to 25 minutes. Drain.

  3. Toss the potatoes with 2 tablespoons cooking oil, transfer to a baking sheet and smash with a spatula or measuring cup.

  4. Drizzle with more oil and season with salt and pepper.

  5. Broil, turning, until crisp and golden, 15 to 20 minutes.
